CHARTING NEW TERRITORIES

Embracing Western Australia's rich bounty, alongside Perth-born partner and former noma head gardener, Kirsty Marchant, the couple charts new territories at Alberta's Kitchen & Store. Fusing the high techniques of noma, the essence of Eleven Madison, and the local inspirations of Western Australia, Chef Ben and Kirsty continue their pursuit of gastronomic excellence.

A NOMADIC CULINARY TALE

Chef Ing’s odyssey took flight from Ottawa, spurred by mentorship and an insatiable curiosity. Eleven Madison Park, a beacon of culinary finesse in New York, captured his attention before noma’s allure beckoned. Working under René Redzepi, he embraced an entirely different palate, heavily driven by umami and the transformative power of fermentation.

REDISCOVERY BEYOND BORDERS

As Chef Ing journeyed from the bustling streets of New York to the innovative kitchens of Copenhagen, his culinary narrative became enriched with diverse influences. The eclectic flavours of Japan, the vibrant essence of Mexico, and the earthy tones of Australia punctuate his tenure, revealing a chef constantly in evolution.

Currently settled in Western Australia, Chef Ing has found a canvas in 'Alberta’s Kitchen & Store' to paint his culinary visions. Drawing from global experiences and regional treasures, he crafts dishes that are both nostalgic and avant-garde, making a further mark on every restaurant he helms - a gastronomic destination.
